What Happens When Lasagna Meets the Fryer?

Sicilian Roast introduces Fried Lasagna this June, a new take on a house staple available all month across all four Metro Manila branches.

The dish takes a classic lasagna and gives it a new texture. Layers of pasta, herbed ricotta, and mozzarella are set until firm, then hand-breaded and fried to order. Each slice is finished with grated parmesan and fresh herbs and plated over a pool of marinara. The result is a golden, crisp crust that gives way to a soft, cheesy interior.

Frying changes how the dish eats without changing what it is. The breading crisps the outside and holds the layers together, while the inside stays soft and cheesy. The marinara underneath cuts through the richness and keeps it close to the lasagna people already know.

“Lasagna is already one of the dishes people come back for, so we wanted to do something with it they haven’t seen here before,” says Executive Chef Matt Navarro. “Frying it gives you that crisp shell, but everything inside is still the same lasagna, the pasta, the cheese, the herbs. Nothing about it is lost.”

Fried Lasagna is available from June 1 to June 30, 2026, alongside the regular menu at all four Sicilian Roast branches in Legazpi Village, Makati; Santolan Town Plaza by Rockwell, San Juan; The Arton Strip by Rockwell, Quezon City; and Molito Lifestyle Center, Alabang. All branches are open for lunch and dinner, and dinner reservations are recommended.
