Savoy Hotel Mactan Newtown debuts new pastry collection at Kadaugan sa Mactan Food Fest

Savoy Hotel Mactan Newtown is placing its newest pastry creations at center stage as it debuts a fresh lineup at the Kadaugan sa Mactan Food Fest at the Mactan Shrine, offering festival-goers the first taste of its latest dessert direction.

The collection is created by Pastry Chef Alex Surig, who brings together classic pastry craftsmanship and Southeast Asian-inspired flavors, shaping a menu that highlights familiar local ingredients in reimagined, contemporary forms. The debut is positioned as the first public unveiling of this new pastry selection.

Leading the lineup are the Bucayo Pain au Suisse, Ube Leche Flan Croissant, Turon Croissant, Tablea Brownie Brioche, and Mango Sticky Rice Danish. Each piece reflects a specific flavor memory inspired by Filipino and regional Southeast Asian desserts. The Bucayo Pain au Suisse draws from coconut caramel richness, while the Ube Leche Flan Croissant layers two iconic Filipino favorites in a buttery pastry base. The Turon Croissant takes the familiar banana turon and translates it into a laminated pastry format, offering a crisp, caramelized take on a street food classic. The Tablea Brownie Brioche highlights deep chocolate notes from local tablea, balanced with a soft brioche texture, while the Mango Sticky Rice Danish brings together sweet mango and creamy rice-inspired flavors in a flaky pastry profile.

This marks the first time these items are being introduced to the public, with Kadaugan sa Mactan serving as their launch platform and initial tasting experience.

Separately, Cebu’s Best Ensaymada continues to be part of Savoy Hotel Mactan Newtown’s established pastry offerings, remaining a signature favorite alongside the new collection.

Beyond the pastry showcase, the booth also features a selection of rice bowls inspired by Filipino and Asian comfort cuisine, designed for hearty festival dining. Offerings include Humba de Cebu, slow-braised and rich with soy and spices; Chicken Adobo, a familiar staple known for its balance of savory and tangy notes; Bistek Tagalog, featuring soy-marinated beef with onions; Gochujang Shrimp, which brings a mild Korean-inspired heat and sweetness; and Asian-Style Marinated Tofu for a lighter plant-based option.

These selections are presented under the hotel’s Bike n Brew concept, which reflects a casual, outdoor dining experience inspired by street-side café culture.

To round out the menu, guests can also enjoy refreshing beverage pairings including Indigo Sambac, a floral-inspired chilled drink, as well as bottled iced coffee options such as cold brew and Spanish latte, designed to complement both sweet pastries and savory rice bowls.
